EGG PRODUCTION
could reach about 34.2 million metric tons of eggs per year by 2020.
Likewise, egg production in the U.S.
continues to trend upward from 5.7
million metric tons in 2015, as some
producers invest in transitioning to
a cage-free operation. With China
being the largest egg-producing
country, Asia has historically held
the largest number of layers. The
region saw the largest increase at 45
percent from 2000-13, followed by
Central and South America, which
saw a 44 percent increase over the
same time (Table 1).

US egg production
increasing slowly

USDA projects the U.S., a
leading egg-producing country,
to continue its long-term trend of
increasing production. Since 2000,
U.S. egg production is up nearly 23
million eggs as of 2017, according
to American Egg Board estimates
(Figure 3). USDA forecasts this
trend to continue in the short term
as well, estimating the U.S. produced 8,565 million dozen eggs in
2016 and 8,763 million dozen in
2017, with a projected increase to
8,890 million dozen eggs in 2018
(Table 2). Over the long term, a
major shift in the way these eggs
are produced in the U.S. is predicted to occur. According to the most
recent Top Egg Companies Survey
by Egg Industry, in just one year,
U.S. egg producers changed from
predicting in 2016 that 13.7 percent
of hens would be housed cage free
in 2025 to predicting 40.6 percent

Egg production
around the world
Egg production in the rest of the
world will hold steady or continue
to slowly increase around the rest
of the world, as well. Like in the
U.S., egg producers in the European
Union (EU) are converting to cagefree housing systems to appeal to
consumers' heightened awareness

of animal welfare. In the long term,
producers in the EU have seen
market prices for eggs rise over the
past 17 years, and this trend has continued into 2017 after dipping from
2015 to 2016 (Figure 4).
As diets in Asia shift to include
more proteins, egg production not
only in China but in Southeast Asia
is also increasing. In 1963, Southeast
Asian poultry meat and egg production comprised 14 percent of gross
production value; however, data
